Single malt whisky is a whisky made at one particular distillery from a mash that uses one particular malted grain, which is ordinarily barley. Single malts are typically associated with Scotland, though they are also produced in various other countries. Under the Scotch Whisky Regulations, a "Single Malt Scotch Whisky" must be made exclusively from malted barley and must be distilled using a pot still and must be aged for at least three years in oak casks of a capacity not exceeding 700 liters. This beautiful malt is first matured in ex-bourbon casks, from a family run cooperage in Kentucky. It is then finished in new American oak barrels. Only local Scottish barley is used to craft Deanston and a pure water source from the banks of the River Teith.

Our 25 year old has also been re-introduced as an un-chillfiltered spirit, with natural color, a higher strength of 46.3% and is delivered in a smoked oak glass bottle. Its labelling is on aged parchment and it finds its bed in an Alder wooden box lined with Hessian and closed with solid brass fittings.

This cask from the Bunnahabhain Distillery has been maturing quietly for over 26 years. In that time, the oak has given the whisky a golden glow and a rich, dessert-like flavor. Time does not suit all malt whiskies but this cask has matured slowly allowing a gradual depth of flavor.
