Caol Ila Distillery (pronounced cool-EEla) means “Sound of Islay”. It gets this name from it’s location of where the distillery sits, looking out on the Sound of Jura the stretch of water that separates Islay and Jura. Caol ILa was founded in 1846 by Hector Henderson. Caol ILa was mothballed in 1927 and reopened in 1937. The distillery was closed one more time during WWII. In 1972 all the buildings except for the warehouses were demolished and rebuilt. They built a larger distillery but it was built to the same original style as before. Caol Ila is currently owned by Diageo. The distillery is the 2nd largest distillery in the Diageo portfolio and is by far the largest distillery on Islay. Caol Ila has six stills, three wash and three spirit. They produce a whopping 6,400,000 litres a year. House Style: Oily, olive-like, juniper. A wonderful apertif.
Sweet cured meat aromas with hints of green apples and pear. On the palate, sweet and smoky, with tropical fruit flavors.
